“Better Than Tates” Oatmeal Raisin Cookies

My household has always been a huge fan of Tate’s cookies… so when my mom said these were better than Tate’s, you know it’s a big deal.

Ingredients:

  • ½ cup & 2 tbsp light brown sugar

  • 3 tbsp (1/5 cup) cinnamon sugar or granulated sugar

  • 1 stick (1/2 cup) butter at room temperature

  • 1 tsp vanilla extract

  • 1 egg

  • 3/4 cup of GF all purpose flour

  • 1 tbsp cinnamon (can add more or less depending on preferred flavor)

  • ½ teaspoon baking soda

  • Pinch of salt

  • 1 ½ cup of GF oats

  • 1 cup raisins

Procedure:

  1. Preheat oven to 350 F and line baking tray(s) with parchment paper

  2. In a large mixing bowl, mix together the sugars, butter, and vanilla until fully combined

  3. Beat in an egg

  4. In a small mixing bowl, whisk together the dry ingredients: flour, cinnamon, baking powder & salt

  5. Slowly start folding in the dry ingredients into the wet ingredients

  6. Once combined, gently fold in oats and raisins.

  7. Create 1 ½ - 2 inch balls and place on parchment paper, equidistant away from one another (leave room for them to expand).

  8. Put in oven for ~7-10 minutes. I would just check on them once in a while- be sure to take out once they are a nice golden brown like the photo above
