“Better Than Tates” Oatmeal Raisin Cookies
My household has always been a huge fan of Tate’s cookies… so when my mom said these were better than Tate’s, you know it’s a big deal.
Ingredients:
½ cup & 2 tbsp light brown sugar
3 tbsp (1/5 cup) cinnamon sugar or granulated sugar
1 stick (1/2 cup) butter at room temperature
1 tsp vanilla extract
1 egg
3/4 cup of GF all purpose flour
1 tbsp cinnamon (can add more or less depending on preferred flavor)
½ teaspoon baking soda
Pinch of salt
1 ½ cup of GF oats
1 cup raisins
Procedure:
Preheat oven to 350 F and line baking tray(s) with parchment paper
In a large mixing bowl, mix together the sugars, butter, and vanilla until fully combined
Beat in an egg
In a small mixing bowl, whisk together the dry ingredients: flour, cinnamon, baking powder & salt
Slowly start folding in the dry ingredients into the wet ingredients
Once combined, gently fold in oats and raisins.
Create 1 ½ - 2 inch balls and place on parchment paper, equidistant away from one another (leave room for them to expand).
Put in oven for ~7-10 minutes. I would just check on them once in a while- be sure to take out once they are a nice golden brown like the photo above
