Mixed Fruit Crumble

The combination of sweet, tang, and tart flavors from strawberries, apples, and rhubarb creates the perfect crumble!

Ingredients:

  • 4 apples

  • One container of strawberries

  • 1 cup rhubarb (if frozen, let it defrost)

  • 1/4 cup and 1/2 cup sugar (separated)

  • 1 tablespoon of vanilla

  • 1 tablespoon of cornstarch (OPTIONAL— if you don’t want the fruit to be as juicy/liquidy, the cornstarch will absorb some of that up though. Don’t worry, it won’t be dry!)

  • Zest of ~ 1/2 a lime (yes…. this is the secret ingredient)

  • 1 1/2 cups of rolled oats (GF or regular)

  • 1/2 cup flour (GF or regular)

  • 1/4 cup almond flour

  • Pinch of salt

  • 1/2 cup sliced almonds (optional)

  • 1 stick of cold butter, shredded

Procedure:

  • Preheat oven to 375 F

  • Prep the fruit

    • Peel apples and cut into 1 inch pieces

    • Cut strawberries in 1/2, unless they’re big then cut in 1/4ths

    • Cut rhubarb into 1 inch pieces

  • Place fruit into a long tart/pie tray (or really any tray that’s semi-deep and long)

  • Pour vanilla and 1/4 cup sugar (and cornstarch if using) into fruit mixture and mix with your hands

  • Sprinkle lime zest on top of mixture as even as possible

  • In a separate bowl, mix together the flour, almond flour, salt, oats, and sliced almonds.

  • Add in the shredded cold butter. Using your finger tips, mix and crumble the ingredients together. You don’t want the butter to melt, so be gentle. Massage/crumble the mixture together until it looks like small breadcrumbs.

  • Once fully combined, spread the crumble mixture on top of the fruit. Make sure that it is spread even and there aren’t any lumps/hills.

  • Bake for ~25-35 minutes / until the top is golden brown

  • Serve with a scoop of your favorite ice cream! (vanilla for me, please!)

  • Store wrapped in the fridge for up to a week

REHEATING:

Do NOT reheat crumble in the microwave. It isn’t worth it, I promise. Throw it in a hot oven (350-400 F) for a few minutes / until warm. OR if you have an air fryer, put it in 400 F for 5 minutes— works like a charm.
