Chicken Tenders

Ingredients:
1 ½ cups Brown Rice Flour
½ tbsp Salt
½ tbsp Pepper
2-3 tbsp Smoked Paprika
2 Eggs
2 cups GF seasoned breadcrumbs
1 ½ cups Canola/Vegetable/Neutral Oil
Chicken Breast/Tenders (quantity depends on amount desired)
Procedure:
For Cutlets: slice breasts in half so your cuts are thinner.
For Tenders: either buy tenders or slice chicken breast into strips
Prepare Stations:
Station One: Flour mixture— whisk/mix with fork together brown rice flour, salt, couple turns of pepper grinder, and paprika
Station 2: Beat two eggs in a bowl
Station 3: Seasoned GF breadcrumbs
Heat shallow pool of oil in pan until hot (make sure it’s under half of the height of pan- we do not want to start a grease fire)
Once oil is heated, place chicken in station one, making sure every side of chicken is coated, then to station two until fully coated, and lastly in station three until fully coated
Once coated, carefully place chicken in oil. Be careful for oil popping and be sure the heat isn’t too high. Flip after a minute or so- be sure to check color of crumbs before flipping (you want that golden crispy brown). Approximately 3 minutes each side- make sure chicken is not pink when cut in half
When done, place on a plate with paper towels to soak up the leftover grease
REPEAT AND ENJOY!!!
